Apple, Blue Cheese & Pomegranate Salad

Ingredients
- 1/2 cup walnuts roughly chopped
- 4 cups mixed greens
- 1 red apple thinly sliced
- 1/2 cup pomegranate arils
- 1/2 cup blue cheese crumbled
Dressing
- 2 tbsp pomegranate molasses optional
- 1/2 tbsp honey
- 1/2 tbsp dijon mustard
- 1 tbsp apple cider vinegar
- 1/3 cup extra virgin olive oil
- 1/4 teaspoon sea salt
Instructions

Prepare the dressing. Combine all dressing ingredients in a small bowl with a whisk or a spoon. Set aside.

Toast the walnuts (optional)

Combine apples, greens, pomegranate and walnuts. Pour dressing over salad and toss. Add crumbled blue cheese and toss gently.
