Apple, Blue Cheese & Pomegranate Salad

Ingredients

  • 1/2 cup walnuts roughly chopped
  • 4 cups mixed greens
  • 1 red apple thinly sliced
  • 1/2 cup pomegranate arils
  • 1/2 cup blue cheese crumbled

Dressing

  • 2 tbsp pomegranate molasses optional
  • 1/2 tbsp honey
  • 1/2 tbsp dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/3 cup extra virgin olive oil
  • 1/4 teaspoon sea salt

Instructions

  1. Prepare the dressing. Combine all dressing ingredients in a small bowl with a whisk or a spoon. Set aside.
  2. Toast the walnuts (optional)

  3. Combine apples, greens, pomegranate and walnuts. Pour dressing over salad and toss. Add crumbled blue cheese and toss gently.
